QUICK AND EASY: ASIAN STYLE CABBAGE SALAD

A Crunchy Ramen Coleslaw

This Asian style cabbage salad is an amazingly quick and easy recipe to prepare. It is the perfect side dish for every day meals and also great for a potluck, BBQ, holiday, or summer party!

Fresh and flavourful, this salad is packed full of cabbage, almonds and crunchy ramen noodles in a delicious homemade Asian dressing.

Just watch out tho… this salad is highly addictive!

RECIPE

ASIAN STYLE CRUNCHY CABBAGE SALAD

Ready in 20 minutes. Serves 4-6 people.

INGREDIENTS FOR THE SALAD 

  • 16 oz coleslaw mix or a small chopped green cabbage
  • 4-6 green onions- chopped
  • ½ cup sliced or slivered almonds
  • 1 package Ramen noodles (Oriental or chicken flavour)
  • Optional: chopped fresh cilantro to taste

INGREDIENTS FOR THE DRESSING 

  • ½  cup of oil ( I use extra light olive oil, but you can use canola)
  • 3 Tbsp apple cider vinegar
  • 2 Tbsp sugar 
  • ½ tsp salt
  • Seasoning packet from Ramen noodles

PREPARATION

  1. Preheat oven to 350 degrees
  2. Spread crumbled ramen noodles and almonds on a baking sheet. 
  3. Bake for five minutes, stir and bake for 2-5 more minutes or until mixture is slightly toasted and golden. Set aside.
  4. In a large bowl, place chopped cabbage, chopped green onions and cilantro if using. Stir to combine.  
  5. Whisk dressing ingredients together. 
  6. Toss vegetables, crunchies and dressing.
  7. Serve immediately and enjoy!

Tips

In a pinch? Use store bought Asian Sesame Dressing.

Want more veggies? Add julienned carrots.

No almonds in your pantry? You may substitute with peanuts.
