THE MOST DELICIOUS ZUCCHINI NOODLE SALAD

This is a great way to enjoy raw zucchini… fresh, tangy and oh so yummy!  With the addition of bacon, grape tomatoes and fresh basil, this is a perfect meal by itself or a delicious side dish. 

The original recipe was created by cookbook author Maya Krampf. I have tweaked her recipe to satisfy my family’s taste buds. You only need a spiralizer and four main ingredients. It’s that easy! 

Since I love Mediterranean inspired meals, I serve this spiralized zucchini salad together with a pearl couscous dish and grilled cauliflower (recipe HERE). This meal pairs very well with a rosé wine or a good bottle of dry Spanish Cava.

RECIPE

ZUCCHINI NOODLE SALAD

Preparation time is 10 minutes. Serves 4-5 people.                                                                                                                                                            

INGREDIENTS FOR THE SALAD
  • 3 medium or 2 large zucchinis – spiralized 
  • 1.5 cups of grape tomatoes – halved
  • 5 slices of bacon – cooked and crumbled
  • ½ cup fresh basil chopped or cut into ribbons
INGREDIENTS FOR THE DRESSING
  • 3 tbsp olive oil 
  • 1 tbsp lemon juice
  • 1 clove of garlic- minced
  • ¼  tsp sea salt or kosher salt
  • ⅛  tsp freshly ground black pepper
PREPARATION
  1. In a glass mason jar mix all the dressing ingredients and shake until well combined. Alternately, in a small bowl whisk all the dressing ingredients, until emulsified. Adjust salt and pepper to taste.
  2. In a large bowl, combine the spiralized zucchini, the crumbled bacon, the grape tomatoes and ¼ cup of basil. Add the dressing and toss gently.
  3. Garnish with the remainder of the basil leaves. 
  4. Serve immediately… and enjoy!
OPTIONS
  • You can substitute cherry tomatoes for the grape tomatoes.
  • Out of bacon? Substitute with prosciutto
  • No time to prepare the dressing? Use bottled Italian dressing
  • For a Calabrese twist, add ¾ cup fresh mozzarella pearls
