AN EASY SIDE DISH: ASIAN STYLE GREEN BEANS WITH CASHEWS

Sautéed green beans are one of those versatile side dishes that appear in many menus all over the world. This recipe with its Asian twist is a bit different yet super delicious… and quite addictive! You will love how simple and quick it is to prepare.

Bonus: this recipe only requires 3 main ingredients!

RECIPE

ASIAN STYLE GREEN BEANS WITH CASHEWS

Ready in 20 minutes. Serves 4

INGREDIENTS

  • 1 lb green beans, trimmed
  • 2 tbsp olive oil
  • 1/2 cup slivered red onions
  • 1/3 cup raw cashews
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp sesame oil (optional)

INSTRUCTIONS

  1. Blanch the green beans in boiling water for 3-4 minutes
  2. Drain and immediately refresh in a bowl of iced cold water to stop the cooking process. Drain and set aside
  3. In a large frying pan heat the olive oil over medium high heat for 30 seconds
  4. Add onions, cashews, salt and pepper and stir-fry for 2-3 minutes, until the onions are softened
  5. Add cooked green beans, raise the heat to high and and stir-fry actively for 2-3 minutes until the beans feel hot to the touch. Watch out! Do not burn any cashews in the process. Drizzle with sesame oil
  6. Transfer to a serving plate

Enjoy!

NOTES: In a pinch? Frozen green beans can be used instead of fresh beans. Just cook according to package directions.

If using salted cashews omit the salt.

Bonus: You can blanch the green beans a couple of days ahead and keep refrigerated until ready to cook.
