This tasty shrimp boil recipe is a one pot meal that is super easy to prepare. It requires minimal fuss and has a short ingredient list. It is perfect for informal holiday gatherings, family get-togethers or for that hot summer night when you need to feed the gang in less than 30 minutes.

What to Serve…
A shrimp boil with its flavorful broth and ingredients is filling by itself. However, depending on the occasion, I like to serve it with the following:
- A creamy coleslaw
- Garlic bread slices, French baguette or Sourdough bread
- Garlic butter
- Spicy mustard, cocktail sauce and squeezable butter
Pair it with…
Ice cold beer complements a shrimp boil like nothing else.
Not into beer? Pair it with a crisp, white wine (Pinot Grigio or a dry Riesling). Into rum? A classic mojito with its lime and mint is perfect, too.
For an alcohol free meal, cold lemonade will do just fine.
Hosting Tips…
Serving and eating a country shrimp boil is a fun yet messy affair. Some like to serve the drained mix on newspaper, craft or parchment paper. I prefer to serve the mixture on a large white platter to highlight all the colorful ingredients.
I also place decorative metal or plastic buckets on the table to collect shells and corn cobs.
Since we are peeling and eating with our hands, I suggest setting up a container with rolls of damp hand towels for a refreshing wipe down. Another good option is to place small bowls with water and a squeeze of lemon to clean the sticky fingers.
RECIPE
PEEL-AND-EAT COUNTRY SHRIMP BOIL
Ready in 30 minutes.
Serves 4 people.
INGREDIENTS
- 3 Bay Leaves
- 1 large onion, quartered
- 2 lemons, cut into wedges
- 4-5 cloves garlic , smashed
- ½ tsp each salt and peppercorns
- 1lb (454 g) small, red potatoes
- 4-6 ears of yellow or bi-color corn, shucked and cut in half or thirds (depending on the size)
- 1lb (454g) smoked sausage (kielbasa or dry, cured chorizo ) cut into 1in slices.
- 2 lbs large or jumbo shrimp, shell-on
- 3-4 tbsp butter
- 2tbsp fresh parsley, minced
PREPARATION
- Into a large Dutch oven or tall pot, add 12-14 cups of water. It should come to three – quarters up side. Add bay leaves, onion, 3 of the lemon wedges, garlic , salt and peppercorns. Cover and bring to a boil. Simmer for 5 minutes.
- Method A: Add corn, potatoes and kielbasa and return to boil. Reduce heat and simmer (covered) until vegetables are almost tender. About 10-16 minutes. Method B: Add the ingredients in stages. Boil potatoes for 5 minutes. Add corn and boil for 5 minutes. Add kielbasa and boil for 5 minutes.
- Reduce to a gentle boil and then add shrimp. Cook until pink, about 2-3 minutes.
- Drain the mixture well, reserving 1 cup of the broth.
- Arrange on a platter. Remove the spent lemon wedges.
- Melt the butter and whisk it into the reserved broth. Pour the broth over the shrimp mix. Sprinkle with parsley. Garnish with the remaining lemon wedges.
SUBSTITUTIONS
- Not into kielbasa? Use smoked ham instead.
- Don’t have small, new potatoes? Regular potatoes will do nicely. Cut into chunks – skin on.
- Other add-ins: crab, clams
