
Today I am sharing with you this Farmer’s Casserole recipe, which has been part of my cooking repertoire since the mid 90’s. Made with traditional “farm” ingredients such as eggs, ham, cheese, potatoes, evaporated milk and green onions, this tasty breakfast casserole is super easy to put together. Ideal for family gatherings, Thanksgiving, Christmas morning and Easter brunch.
And trust me, you will be adding it to your favourite recipes, too!


RECIPE
FARMER’S CASSEROLE
Prep time is 20 minutes. Serves 6 people
INGREDIENTS
- 3 cups frozen shredded hash brown potatoes
- ¾ cup shredded Tex Mex cheese or Monterey Jack with jalapeno peppers
- 1 cup diced fully cooked ham or Canadian bacon
- ¼ cup sliced green onions
- 4 beaten eggs
- 1.5 cups of evaporated milk (12 oz)
- ⅛ tsp salt
- ¼ tsp pepper
PREPARATION
- Grease a 2 quart baking dish
- Arrange potatoes evenly in the bottom of the dish
- Sprinkle with cheese, ham and green onions
- In a medium mixing bowl combine eggs, milk, pepper and salt
- Pour egg mixture over potato mixture in dish (the dish may be covered and refrigerated at this point for several hours or overnight)
- Bake, uncovered, in a 350° degree oven for 40 to 45 minutes (or 55 to 60 mins if made ahead and chilled) or till the center appears set.
- Let stand 5 minutes before serving
NOTE: This recipe calls for evaporated milk because it is milk that is concentrated and creamy versus regular milk which can yield a “watery and runny” casserole.
MENU SUGGESTION
Serve with melon wedges, orange/grapefruit sections and strawberries. I also love to serve a variety of Viennoiseries (croissants, Danishes and brioches) as well as banana bread and sweet buns.
This casserole pairs perfectly with the ubiquitous yet delicious Mimosa. But for a booze free, refreshing sipper, stir several teaspoons of grenadine syrup into a pitcher of orange juice and enjoy!

The dish is good, but I thought it needed more seasoning. It also needs to cook way longer than 45 minutes and/or at a higher temp. At 350 for 45 minutes mine was still cold and in the middle and soupy.

You can definitely add chopped jalapeños or purchase the Tex Mex cheese with extra jalapeños/Habaneros to amp up the spice level.
Cooking time: As you know, all ovens are different, so it’s better to keep an eye on the centre – cook the casserole until the centre is set. And let it rest for 5 mins. Hope this helps!
